Pumpkin Cheesecake – Giving Thanks for Cheap and Easy to Use Kitchen Gadgets

I’d rather eat vegan for a week than write a blog post on why pumpkin cheesecakes crack, but I’m more than happy to explain how to get that perfect, creamy-custardy, probably-won’t-crack doneness you all deserve. Use a digital thermometer. Okay, that was a little anticlimactic, but it really is that simple.

If you turn off the heat when the cheesecake’s internal temp is between 155-160 F., and let it cool slowly in the warm oven, you should get exactly what you see here. The reason a thermometer is so key, is that going just by sight is hard to do. Even at 155 F., a cheesecake has a fairly jiggly middle, and really does look undercooked. Many cooks get scared and leave it in for a few more minutes, which can make all the difference.

This should take anywhere from 1 1/2 to 2 hours. Many factors are involved, but a big one is the temperature of your cheese and eggs. Mine were cold, which not only makes mixing harder, but also will increase cooking time, as a room temp batter starts cooking sooner. So, to recap, use a thermometer.

That covers the cheesecake, but what about the ginger snap crust? It was okay. The flavor was great, but it got a little gritty and gummy, and Im not sure which, if any, of the thirty-five ingredients in the cookies was responsible. Maybe a little pre-baking would help, but I cant pretend to be overly concerned. Feel free to improve, or just go graham cracker.

This recipe was adapted from one found on my friend Elise’s blog, Simply Recipes. She’s one of my all-time favorites (food bloggers and people), and I insist you head over there to check out her gorgeous version as well. I (we) hope you give this easy pumpkin cheesecake a try soon. Enjoy!


Ingredients for 1 Pumpkin Cheesecake (10 slices)
Note: This is not a classic, dense, NY-style cheesecake, and has more of a creamy, custardy texture.

For the crust:
2 cups gingersnap crumbs
3 tbsp all-purpose flour
1/2 cup brown sugar
1/4 cup melted butter
1 large egg yolk

Filling
4 (8-oz) packages cream cheese, room temp
1 cup packed brown sugar
1/2 cup white sugar
2 (15-oz) cans pure pumpkin puree
4 large eggs
2 large egg yolks
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
1 tablespoon vanilla extract
1 tablespoons bourbon whiskey
1/4 cup all purpose flour

*Bake at 325 degrees F. for 1 1/2 to 2 hours, or until internal temp is between 155-160 F. Let cool in warm oven, with door cracked.

Patsy generously shared her recipe with me. It called for diced tomatoes, black beans and cheese, so I revamped the flavors to create a lighter, legume-free vegan version. Quinoa is a complete vegetarian protein, so you really don't need the black beans (as a complementary protein), unless, of course, you're fond of those fiber rich little beauties in your quinoa salad.

Panzanella Caprese


I dont believe its any secret that I love to cook.

My specialties: Breads, pies and oh -- anything using ground venison. (When you marry a hunter, you learn to make yummy eats with a variety of dead carcasses. Im just sayin.)

But lately, Im having dreams of creating something new. Something different. Something fresh. And something beautiful.

Im what you would call uninitiated in the ways of traditional gourmet cooking, but I have decided to stop waiting on the sidelines and get in the game.

Just for fun.

We country gals can flex our culinary muscles every now and again. Right?

I cant hear you.

Right?

Right on. I heard you that time.

For my maiden voyage into the world of gourmet chefery - I prepared an Italian salad dish, Panzanella Caprese, based on this recipe I found on Gourmet.com:

Panzanella Caprese

Serves 6 to 8

1 (18-inch) piece of baguette, cut into 1-inch pieces

1/3 cup plus 2 Tbsp extra-virgin olive oil, divided

1 garlic clove

3 tablespoons balsamic vinegar

3 tablespoons drained capers, chopped

1 1/2 lb tomatoes, cut into 1-inch pieces

1 small red onion, thinly sliced

1 lb fresh mozzarella, cut into 1-inch chunks

1/2 cup chopped basil

•Preheat oven to 375°F with rack in middle.

•Toss bread with 2 Tbsp oil and 1/4 tsp each of salt and pepper in a large 4-sided sheet pan, then spread out in 1 layer. Bake, stirring once, until golden, 12 to 15 minutes.

•Mince and mash garlic to a paste with 1/2 tsp salt. Transfer to a large bowl and whisk in vinegar, capers, and remaining 1/3 cup oil.

•Add croutons to dressing along with tomatoes, onion, mozzarella, and basil, then toss. Let stand at room temperature 30 minutes before serving.

I wanted to do this one by the book, so I bought all of the necessary ingredients to prepare this dish. The total grocery bill: $20.00. The fresh basil and capers were the most expensive items. I didnt even know what a caper was until I bought a jar. I honestly thought they would be in the sardine section.

For reals.

What a nube.

But, being the thrifty sort that I am, I figured if I made the baguette and used my own homegrown garlic, tomatoes, onion and basil -- I would save $7.00. When my garden is ready, I will definitely make Panzanella Caprese again, using homemade bread and vegetables harvested from the Claeys garden.

Aattu Ratham Poriyal lamb blood curry

The sight of the goat blood in the meat shop kept like a pudding in bowls used to frighten me. I never imagined making a curry out of it. But during my last visit to chettinad, my periamma whom I have already mentioned to be great cook asked me to try this and blog the recipe. She told me the recipe also. She told me that the curry will not have any smell. This Sunday the lady who comes once or twice a month from the nearby village and helps me in cleaning the house, fish tank, car etc came. I asked her about the goat blood. She said that they people buy and cook it. So I took her to the shop to buy it. There were some 6 or 7 bowls of jelly like red thing in front itself. I asked for one .The man in the shop asked me is it enough? I asked the cost .He told 15 Rs. I was surprised and got one bowl more. The lady who came with me told that they would have added salt in the bowl and should be careful while adding salt to the curry. As per the recipe my periamma gave, I first washed the thing nicely. In a kadai in 4 cups of water boiled the blood till they turned like liver. Allowed it to cool and then cut into small pieces. I prepared it as per the recipe. I never told my daughter what it was. While eating she told me ‘amma the liver is very soft today The curry did not have any non veg smell and was good.

Ingredients
Goat or lamb blood -2 bowls
Small onion minced -30 or big onion minced -1 or 2
Garlic chopped –little
Curry leaf –little
Grated coconut -2 table spoons
Green chili -8 minced
Procedure
Wash and cook the blood in a kadai in 4 cups of water till it turns like liver. Allow it to cool. Then cut them into small pieces .
In a kadai in one teaspoon of oil season the curry with a teaspoon of fennel seed and little curry leaf. Sauté the minced onion and garlic and chilies for 5 minutes. Now add the cut pieces too and mix well. Check for the salt taste and add the salt needed and cook for 5 to 6 minutes without adding water .There will be little water in the boiled pieces. Finally add the grated coconut and mix well. The fry goes well with both sambar and curd rice.
I have not browsed the medicinal value of this goat blood. If my readers can find time to do so please send it to me .I will add on to the blog.

Easy Version of Napoleon Cake


There arent many dessert recipes that offer a lovely light pastry filled with rich cream such as a Napoleon. This is my express version of Napoleon.

     Ingredients for dough:
1 package of puff pastry

       Cream:
1 stick of butter (soften)
1/2 cup powder sugar
2 small packs of instant vanilla pudding
2 1/2 cups milk
12 oz cool whip (melted at room temp for an hour)



Puff pastry need to be at room temperature. You will need pieces of aluminum foil.
Sprinkle a little bit of flour on the foil and roll into a thin flat piece. You can put a plate over it to make it into a circle cake. 
I made mine a square shape. Poke with a fork all around. Bake it on the same piece of foil. Bake on 350F about 10 min. 
The dough will shrink.



To make cream. Put milk into a bowl add pudding  and mix for a few min. Set aside. 
Butter have  to be really  soft.  Mix it with powdered sugar. Add a few table spoons of pudding to make it really smooth.
Add all the pudding and cool whip. Mix until smooth. 
Spread it on each  layer of the dough.
Leave it over night to soften. To decorate you can use crumbs from the dough. Or be creative with fruits. Enjoy with your favorite tea or coffee.

Crusty Herb Potato Wedges

Simple and delicious. The key is tossing the spices with the potatoes and oil in a bowl and then on to the pan. The silicon mat we are baking on is a very nice thing to have in your kitchen.

These are baked for 15 min at 425 degree F. and then turned over and cooked for another 15 min., or until nice and crusty.


Ingredients:
2 Russet Potatoes
1 Tbl Dried Herb Blend, Like Herb De Provance
Olive Oil
Paprika
Salt and Pepper

Spicy Chicken and Apple Cake

We all enjoyed it, not too spicy, I havent cooked bulghar wheat like this before, I usually just soak it and then have it in a Tabbouleh type salad. I would definitely use it again, it doesnt go as soggy as couscous.


Rachel Allens Dutch Apple Cake from BAKE

2 eggs
175g (6oz) caster sugar plus 15g (1/2 oz) extra for sprinkling
1/2 tsp vanilla extract
75g (3oz) butter
75ml (2 1/2 fl oz) milk
125g (4 1/2oz) plain flour
1/2 tsp ground cinnamon
2 1/4 tsp baking powder
2 small or 1 large cooking apples
75ml (2 1/2 fl oz) double cream, to serve

20cm x 20 cm (8 x 8 in) square cake tin

1. Preheat the oven to 200C (400F), Gas mark 6. Line the sides and base of the cake tin with parchment paper.
2. Using an electric whisk, whisk the eggs, 175g (6oz) caster sugar and vanilla extract in a large bowl until the mixture is thick and mousse-like and the whisk leaves a figure of eight pattern (this will take about 5 minutes).
3. Melt the butter in a saucepan with themilk, then pour onto the eggs, whisking all the time. Sift in the flour, cinnamon and baking powder and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared tin and smooth the surface.
4. Peel and core the apples and cut into thin slices, then arrange them over the batter. They will sink to the bottom(this is meant to happen). Sprinkle with the remianing sugar and bake in the oven for 10 minutes. Reduce the oven temperature to 180C, 350F, Gas mark 4 and bake for a further 20-25 minutes or until well risen and golden brown.
5. Allow to cool in the tin , cut into squares and serve warm.



It is delicious, I served it with greek yogurt, rather than cream and the apples didnt all sink into the batter, some stayed on top and were nicely caramelised with the sugar.

Raisins Bread Loaf


This is my first encounter with Bread making and i am so happy that it came out really well.



Ingredients
All purpose flour/ Maida-4cups
Warm Milk-1 1/2 cups
Eggs-2
Active Dry Yeast-2tbsp
Sugar-2tbsp
Salt-1tsp
Raisins-1cup
Butter-2tbsp (melted)

Method
Take a medium bowl add yeast, warm milk and sugar. Allow the yeast to raise for 15mins. In a large bowl add the flour, raisins and salt. When the yeast has raised, add the melted butter, beat the 2 eggs and add to the milk mixture. Now add the milk mixture to the flour and knead for atleast 10 mins to get a very soft and smooth dough. Place the dough in the same large bowl, apply some more butter on the upper surface and cover with the wet cloth. Rest the dough aside for 2 hours or until the dough doubles in its size. When the dough doubles in the size, punch the dough on the upper surface so the air inside the dough escapes. Once again knead the dough and set side for 10 mins. After 10 mins place the raised dough in the loaf pan, cover with wet cloth and set aside for 30 mins. Preheat the oven for 425F/220C. In a small bowl beat a egg with water for egg wash and brush the loaf with egg wash. Bake the loaf in the oven at 425F/220C for 15-20mins till golden color. Once done remove from the oven and apply butter on top.

PEANUT BUTTER RICE KRISPIE TREATS

A few weeks ago, Heidi at Tried-and-True Cooking with Heidi posted a recipe that she called Old-School Peanut Butter Squares. The recipe caught my eye because it does not call for marshmallows (we like marshmallows, but they arent always in the pantry). The only tweak I made was to substitute some of the sugar for a little honey (I love the taste of peanut butter with honey). I must say the treats were a big hit around here. With moms packing school lunches these days, I thought it would be a good time to repeat Heidis super simple and super tasty recipe.

1 cup light corn syrup
1 cup white sugar (see note)
1 cup peanut butter
5 cups crisp rice cereal

Combine corn syrup and sugar in medium saucepan. Stir until well blended and cook on medium heat until boiling (stirring occasionally). Let boil for 30 seconds and remove from heat. Stir in peanut butter and mix until well blended. Stir in cereal and mix well. Pour into greased 9x13 pan. Lightly spray hands with cooking spray and press mixture into pan. Cool and cut into squares.

NOTE: I removed 2 tablespoons of sugar and replaced it with 2 tablespoons of honey.
NOTE: I let my syrup mixture gently boil for a full minute.
NOTE: I found that you dont have to spray your hands with cooking spray when you press down the mixture. If you dampen your hands and just shake them dry for about 5 seconds, it does the same thing without making the treats greasy.

Chettinad Mutton Kola Urundai or Kari Kola Urundai Chettinad Mutton Balls


I am sure that my blog on chettinad cookery will never be complete without this recipe. I know the name of this itself will make the people who know its taste mouthwatering. Due to its high fat content, I was little hesitant in making these balls. But for the sake of my readers, I bought mutton today and made the balls and the kola urundai Kuzhambu
Though in different names people of all states make this wonderful dish, as usual chettinad preparation is special in using the correct amount of ingredients. Though this recipe seems to be simple, ingredients has to be in correct quantity else the balls will break in the oil.


Ingredients
Boneless Mutton-150 Gms (minced)
Green chilli-2
Red chilli-3
Pottukadalai-1 table spoon
Cashewnut-4
Fennel seed-1 teaspoon
Grated coconut-2 tablespoons
Small onion-5
Garlic-6 pods
Ginger-a small piece
Cardamom-1
Clove-1
Cinnamon-1 small piece
Curry leaf-little
Egg-1
Procedure
Place the kadai in the stove. Pour one teaspoon of oil. Add the cinnamon, clove and cardamom. Add the curry leaves, ginger, garlic, onion, green chilies one by one and sauté. When there is not much water content add the pottukadalai, cashews and grated coconut and fry till the coconut turns slightly red.
In chettinad they don’t sauté the minced meat. Those who don’t get minced meat can mince it in an onion mincer making the mutton pieces small(I did like this today).But I always prefer to sauté the meat as I feel that mutton cant get cooked well during frying. So either way you can try.
The next is the grinding part. First grind all the sauted items except the mutton. Don’t add water. Once you add the mutton the water will be enough. If you find it difficult to grind without water sprinkle some water. Grind it without lumps to a smooth paste. If you want to store some portion, take that out and store it in the freezer. In the remaining portion, add a broken egg and mix well. Make small balls. Keep a small kadai in the stove. In three to four tablespoons of oil fry these balls in medium fire till the balls turn golden brown (at least five minutes of frying needed).If the flame is high the balls will turn brown immediately, but the mutton wont get cooked well. So fry in low or medium fire. Serve it along with little tomato sauce and get all the good name from your family members or from your better half

HIWWI Tory Burch Jenna High Heel Boots

When I think of fall dressing, I can’t help but think about Buffy the Vampire Slayer. I’ve actually never even seen an episode, but one night while I was still in high school, I was skimming the channels, probably looking for an episode of Friends or America’s Next Top Model, I randomly landed on Buffy the Vampire Slayer. I was just about to change the channel again when Sarah Michelle Geller entered the frame wearing the most incredible knee-high brown heeled boots, mini dress and slouchy cardigan. The leaves beneath her boots crunched and it looked like it was under 70 degrees wherever she was, which was pretty much my idea of heaven as a 16-year-old Houston-native that had never seen snow before. The scene ended and SMG was no longer on screen and thus, neither was her amazing ensemble, so I changed the channel, but that scene changed my life...sort of. (A million brownie points to anyone who knows which episode this outfit actually even appeared in—I know you Buffy-philes are out there!!!!). 

This week, I discovered these Tory Burch boots and I’m pretty sure my life will never be the same. These remind me so much of the iconic outfit I associate with fall that I couldn’t stop myself from trying to recreate the look for 2012 F/W, even if they cost more than some people’s rent. (If these boots cost more than your rent, you obviously dont live in D.C.)

I just bought this amazing shrug from AllSaints. I like it because it looks cozy, has a cool detail at the neck, and because it’s AllSaints, hello!

I really like the idea of taking something really cozy like this shrug and layering it on top of this structured faux leather shift, since like, leather (and any faux forms of it) are gonna be so huge for fall. Plus the skirt is short and the boots are tall, which says “I’m a little slutty, but I know big words like ‘juxtaposition,’ so I’m also kinda smart, lol!”
