Strawberry Chocolate Chip Scones Gluten Free Recipe

Gluten free scones with strawberries and chocolate chips
Easy gluten-free scone deliciousness.

Today was a good day. A strawberry and chocolate laced crusty on the outside tender on the inside kind of day. That's right. I got sconed. And the best part (aside from the fresh organic berry goodness, that is)? These golden biscuity morsels are vegan. That's right. No eggs. No milk. No butter (sorry, moo-cow fans).

On a whim yesterday (I am often prone to whims Dear Reader, especially after a sun dappled picnic on the Santa Fe plaza, perched on a bench beneath a flowering cherry tree across from a red robed Buddhist monk eating Chinese take-out. We devoured pesto slathered smoked turkey rolled in brown rice tortillas and I didn't drip a single green drop of cilantro infused olive oil on my ironed boot cut jeans) I picked up a Gluten-Free Pantry Muffin and Scone Mix at Whole Foods (long time readers know I miss my old favorite Pamela's Ultimate Baking Mix, and I've yet to find an all-purpose replacement mix that's half as good).

I was in such an expansive mood post my double espresso at the nearby Starbucks that I thought I might try baking something fun and slightly indulgent for the weekend. The organic strawberries smelled beyond heavenly in their ripe and ruby lusciousness. Yes, I smell all my fruit and veggies before I buy. Don't you? The woman with the amber handled cane you see standing in the Whole Foods produce aisle sniffing tomatoes and berries and anything else she can get her one free hand on, Darling?

Strawberry Gelatine

I love gelatine desserts in the summer - they are just so refreshing, and not too filling either. The exact amount of sugar will depend on how sweet your strawberries are, so do taste and adjust.

6 to 8 servings
20 minutes prep time - 2 to 3 hours set time


1 quart strawberries
1 1/2 cups cold water
1/4 cup honey
2 tablespoons to 1/4 cup sugar
the juice of 1/2 lemon

2 tablespoons powdered gelatine
1/2 cup boiling water
extra strawberries to garnish

Wash and hull the strawberries.  Put them in a food processor or blender with the 1 1/2 cups cold water, the honey and the sugar. Start with 2 tablespoons of sugar, and once everything is processed, taste and add a little more if necessary.

Process the berries until very smooth, with no visible pieces left at all. Strain the mixture into a mixing bowl, discarding any seeds or pieces that wont go through.

Put the water on to boil. Squeeze the lemon juice into a small bowl, and sprinkle the gelatine over it to soak while the water boils. Stir in the boiling water, stirring well until the gelatine is completely dissolved. Add the gelatine mixture to the strained berry purée, mixing well.

Divide the mixture into individual serving dishes. I find there is a certain amount of froth on the top; this is fine, in fact it becomes a feature of the jelly. Refrigerate the jellies until set; 2 to 3 hours. Serve garnished with extra strawberries, or a dab of whipped cream if you like. Alas, I didnt have any.

This Strawberry Cheesecake Sauce Recipe is the Lesser of Two Evils

I only had enough time to do one of two things; write a post with no video, or edit and upload a video with no post. Guess which one I went with? Okay, so technically this is a post, but since its really about not doing a post, Im not sure it counts. Wow, I am tired! Where was I? Oh yeah, heres video recipe for the strawberry dessert sauce I paired with the cheesecake. Enjoy!



1 pint strawberries, rinsed, green tops removed (frozen will work)
1/4 to 1/3 cup sugar (depends on sweetness of berries)
1/2 teaspoon balsamic vinegar
2 tablespoon water
1 teaspoon cornstarch dissolved into 2 tablespoons water

SANDRA’S LUSCIOUS STRAWBERRY PEAR APPLE ORANGE SMOOTHIES

These organic light and fruity
smoothies are perfect for those
sunny spring mornings...
Servings: (2)
Prep: 5 Mins.

INGREDIENTS

Smoothies:
½ cup ice
½ cup strawberry Greek yogurt
1 tablespoon wheat germ
¼ teaspoon cinnamon
1 teaspoon vanilla extract
2 teaspoons honey
1 orange, peeled, sectioned, and cut into chunks
1 unpeeled pear, cored and cut into chunks
1 unpeeled apple, cored and cut into chunks
4 large strawberries, hulled and cut into chunks

Garnish:
1 strawberry, hulled and cut in half lengthwise

METHOD

Place all ingredients in ordered listed into the blender; puree until smooth.  Pour into two serving glasses with straws, and garnish with halved strawberry slices.
